1.5 cup organic rolled oats (regular or gluten tested)
1/2 cup organic activated buckwheat
1/2 cup insecticide free raw almonds (roughly chopped)
3/4 cup organic coconut flakes
1/4 organic pepitas
1/4 organic chia seeds
1/4 organic sunflower seeds
1/2 tsp vanilla powder
3 tbsp organic melted coconut oil or macadamia oil
2-3 tbsp organic coconut nectar
2-3 tbsp organic sprouted pea protein
1/2 tsp organic cinnamon
Combine all ingredients in a large bowl and mix to combine.
Pour onto a baking tray lined with baking mat or baking paper and spread to make a thin layer.
Bake for 15 minutes or until light brown and crunchy (it will get more crunchy as it cools).
Once cooled, transfer to jar to store.
Can be stored in an airtight container for up to a week.
