Description
These Organic Shortbread Cookies are super easy to make, with only one additional ingredient! They are soft, buttery and delicious. You can also easily add extra ingredients to create flavoured shortbread cookies, such as macadamia or?lemon,?or keep them plain and traditional.
This recipe in a jar is a quick and easy addition to your Christmas entertaining or as a beautiful gift! Makes about 16 cookies.
HOW TO MAKE
Additional Ingredients:
140g organic butter (or your favourite butter)
1 tsp vanilla (or 1/8 tsp vanilla powder)
Method:
1. Beat the butter until it is smooth and creamy
2. Add the jar ingredients in about 3 increments and beat in between each addition
3. Add dough to?a lightly floured surface and shape into either a rectangle?or log shape (depending on whether you would like rectangle or round cookies)
4. Wrap dough and pop in the fridge for?about an hour?or until the dough is firm
5. Preheat oven to 160C fan forced or 180C
6. Using a sharp knife, slice cookies about 1cm thick and place on baking tray with silicone mat
7. Bake for 10-12 minutes – rotating tray in oven half way through
8. After a few minutes of cooling, transfer to cooling rack and store in airtight container once completely cooled
Store at room temperature in a sealed container for about a week
